CHOCOLATE MOUSSE CAKE chocolate butter or margarine eggs, separated and at room temperature cup sugar I tsp. vanilla tsp. cream of tartar 7 oi. semi-swe- '.a lb. 7 I PREHEAT oen to 325 de- grees. In a saucepan, melt chocolate and butter over very low heat. In a large bowl, beat the egg oiks and add 'A cup of the sugar, beating until very light and Huffy. Beat in the warm chocolate mixture and the vanilla. IN ANOTHER large bowl, beat egg whites with cream of tartar until soft peaks form. Add remaining 'A cup sugar, one tablespoon at a time, continuing beating until stiff peaks form. Fold the egg whites carefull- y into the chocolate mixture. Pour 'A of the mixture into an ungreased 9 inch in diameter and 3 inches high, spring form pan. COYER remaining batter and refrigerate. Bake the cake for 35 minutes at the 325 degree oven, remove from oven and cool, the cake will sink a bit in the center while cooling. Now whip I cup cream, add 13 cup powdered sugar and tsp. vanilla, when stiff, set aside. spread melted chocolate quickly on underside of leaves on plate and refrigerate for I hour. Then grasp stem of leaf and pull away from the chocolate. Rose leaves are good, do not use leaves from house-plants. OR YOU might melt chocolate. spread thin on a waxed paper and cut designs to decorate. BAKED STUFFED CHICKEN BREASTS 4 chicken breasts, deboned ': cup celery, chopped fine tsp. parsley ': cup slivered almonds ': stick margarine 8 slices bacon I : crushed cups corn flakes, USE THE deboned chicken breasts or debone them your- self. flatten a bit and make a small slit in each breast for stuffing. Meantime saute celery, parsley and almonds a few minutes. in part of the margarine and place this mixture into the four breasts.
