Butter Crunch Pastry Shells 1H cups flour cup butter t- -i tablespoons cold water 1 cup crushed cornflakes Place flour in mixing bowL Cut butter into it with a pastry blender or two knives until the mixture resembles coarse meal. Aad water until the dough Mix in com- clings flakes. Turn onto a lightly floured board and roll out. Cut into circles and shape into muffin pans. Prick shells with a 450 fork. Bake in a oven for minutes or until lightly browned. Let cool slightly, then remove from pans. Fill with fruit fillings and top with whipped cream. Handle carefully as these are fragile. Yield: 12 shells. Strawberry Filling 1 cups bulled, washed, sliced 10-1- 2 strawberries cup water V4 cup sugar H teaspoon salt tablespoon cornstarch tablespoons butter Combine all ingredients ex--1 cept butter m saucepan. Cook over medium heat, stirring constantly, until smooth and thickened. Remove from heat and add butter. Cool slightly and pour into tart shells. This will fill small pastry shells. Yield: 1 cups. Blueberry Filling: Substitute 2 cups fresh or water packed blueberries (drained), for the strawberries. Add 1 tablespoon lemon Juice. Cherry Filling: Substitute 2 cups tart pie cherries for the strawberries. l teaspoon almond extract may! be added. Cherry juice may be used in place of water. Peach Filling: r.
