MIDVAL- E- Norbest, Inc., recently released a list of helpful hints to help make the Thanksgiving and Christmas holidays go smoothly and safely, from planning stages to leftovers. According to Norbest, nearly all U.S. turkeys are inspected by the U.S. Department of Agriculture (USDA) for wholesomeness and bear the inspection seal on the label. The USDA Grade A shield means it is free from pinfeathers, broken bones, large bruises, cuts and skin tears. A turkey without this shield is just as safe but its appearance may be less than optimum. Hens and toms are both equally tender, moist and delicious, and are young at processing time. Hens are under 16 pounds and toms are over 16 pounds. Be sure packaging is not torn or punctured when choosing a bird. Planning Allow pound of turkey (raw weight) per person for generous servings with only a little left over, or one to pound for leftovers. The raw weight is listed on the tag attached to the top of the package. Fresh turkeys should be cooked within two days of purchase. A frozen, whole turkey in its original packaging may be stored 12 months at 0 degrees F. or below. Never thaw a frozen turkey at room temperature, and microwave thawing is not recommended.
