Kelly manages the Clayton Peterson Ranch in Ephraim. His favorite hobbies are hunting, especially rabbits, pheasants and deer. He enjoys riding his cycle up Ephraim Canyon in the summer to fish. His wife enjoys these activities with him too). Kellys goal is to become semi-sel- f sufficient by growing his own meat, and by gardening and raising his own vegetables. He is a member of the Ephraim Chapter of Utah JayCees, Past vice- president of the Gunnison Young Farmers, a Scout Committee Chairman and active in the LDS Church. He has proven many times to be a helpful neighbor and friend. Kelly took up cooking as a hobby, just to have something to do in the winter, between cattle feedings and his other ranch chores. Kelly and his wife obtained this recipe from his sister Linda for soft cookies, good anytime of the year. These are his favorite. LINDA S SOFT COOKIES cup shortening cup sugar 2 eggs tsp. vanilla 2' cups flour tsp. baking powder tsp. salt Cream sugar, shortening and eggs. Add vanilla. Add rest of dry ingredients gradually. Roll on a well floured board, not too thin. The thicker they are, the softer, cut into shapes. Bake at 350 degrees for about ten minutes. Ausone de Chancel 1 462-283- 3 There are strange and exciting things taking place in the world of agriculture. Remember many years ago how people joked about the food of the future being about the size of pills, and with the addition of liquid, would expand into full size meals. Thanks to experimentation, today although not quite predicted, dehydrated foods are a reality. Science is continually searching for newer and better products, and there is always the speculation of what the food of the future might be. Homemakers have always mixed certain vegetables together for color interest, extra flavor and hopefully good nutrition too. For instance, corn and lima beans (succotash), carrots and peas, potatoes and peas etc. Soon, we will not have to mix our vegetables. They will be grown that way. are endless. of Now, the U.S. Department Agriculture has announced some imthe in portant breakthroughs cultivation of vegetables. Agricultural scientists all over the world have been experimenting with and developing some new kinds of food plants. They have succeeded in transfering a gene from a bean seed into the cell of a sunflower, developing what they call a sunbean. They have also united the tomato and the potato, calling it the "pomatoe. These are only two of their more successful test tube experiments, but as these agricultural scientists continue to experiment, using genetic engineering techniques in crossbreeding, there will be many more new plants developed. Using these same techniques, they are developing plants that have the same high quality protein as animal foods, that are also pest resistant, can fertilize themselves, and enrich the soil, and can grow and produce well under drought conditions. There is a good possibility that one day the equivalent of beef will be reproduced in plants such as genetically constructed corn. Since the term "corned beef has already been used, we will have to call it beef-corThis does not mean that we will be replacing the use of beef or any other choice meat, only that we are improving on and developing new vegetables to supplement our diets during both good and hard times. How soon these plants will be ready for marketing, is hard to say, but watch for them in the future. Cover tightly and cook on medium heat, until done and slightly brown. The steam under the tight lid will cook the potatoes in about 15 minutes while the oil will lightly brown them. Comes out similar to a potato pancake. This next recipe is one that Kelly has made and given to a neighbor when there was a need for compassionate service.
