From the beginning of time, man has enjoyed its rich full flavor and qualities. It can be stored for future use, and sprouted, ground or cooked. Since we have been advised to keep wheat on hand for emergencies (hard turkey red is best) I think it wise to learn its qualities. Wheat, when sprouted, is an excellent vegetable and when used in this form is much higher in vitamins than when used in other ways. When fresh ground, it makes a highly flavorful flour. When cooked plain, it becomes a cereal. The wheat kernel consists of three parts: 1. Bran, the covering or outer layers of the kernel, is rich in minerals, protein and vitamin B. 2. The wheat germ contains most vitamins, but is very rich in vitamin B complex, vitamin E, minerals, fat and the highest grade of proteins. It is this part of the kernel that will germinate under certain conditions. 3. Endosperm, the largest part of the kernel, found inside the bran layers, is mostly starch with gluten and cellulose. It has some protein value, but is a different type protein than that found in the other parts of the kernel; however, the different types of proteins compliment one another forming a perfect balance to the nutritional needs of the body. If you switch suddenly from the refined, highly processed flours to the use of whole wheat, it may take a few days for your body to adjust to the change, but the overall beneficial results will be well worth it. Dont wait until that emergency comes along to hit .your system with a steady diet of wheat. Try it now and get your system used to it gradually; you'll be glad that you did. It is well to remember that products made from fresh stone ground flour have a far richer flavor than those made from the refined flours, however it should be ground often and in small amounts, in order to be used quickly. Dissolve 1 cup dry milk in measuring pitcher by adding enough milk to make 3 cups. Add to above ingredients and stir. Add 7 cups whole wheat flour. Stir til spongy and pour into 3 cups flour in kneading pan. Knead til flour disappears. Put into - 1 lb. coffee cans. Cover with plastic lid or plastic wrap. Let rise until dough of first one touches top or wrap. Remove plastic and bake in preheated oven at 350 degrees F. for 30 minutes. If fresh ground wheat flour is used, it will rise in 30 minutes or quicker on a warm day. Cold flour will take a little longer, but this can still be done in 2 hours.... a dream to have for busy women who like homemade bread. 5- APPLKSAl CE CAKE Tampa Preheat oven to 350 degrees F. Grease and flour pans. Makes 2 round layers, 2 square cakes or one 10 x inch cak. Into sifter put: 2 cups flour 2 tsp. cinnamon 2 tsp. baking powder dash salt (optional) :ii tsp. cloves Blend in mixing bowl: 1 cup sugar and 'a cup shortening. Stir in 1 cup raisins and or nuts. (Mixed fruits can be used as in a Christmas fruitcake.) Dissolve 2 tsp. baking soda in 2 cups applesauce and stir in. Mix in flour, just til it disappears and bake til top is browned and a toothpick inserted comes out clean, (about 35 Min.). DATE BARS 1 cup pitted dates cup nuts 1 cup sifted powdered sugar Tblsp. melted butter or oil Tblsp. lemon juice 2 eggs U cup sifted flour pinch salt Put dates through food chopper or dice. Blend with sugar and beaten eggs; add oil, lemon juice, flour and salt. Mix well. Spread in greased 10 x G x 2 inch pan. Bake at 350 degrees F. 30 to 35 minutes. June is in the process of remodeling the Garrisons home, and is doing much of the work herself, inand cluding some electric carpentry. She has refurbished some of their furniture, including her old, beautifully toned rinky-din- k piano and teaches an exercise class three nights a week. June also decorates wedding cakes. She is a part-timclerk at the Fountain Green Post Office. She is the Moroni Stake recreation leader and the Stake Relief Society artist. She sews for her family, and also repairs dolls and toys. There is no end to her talents. She says that much of her practical knowledge was acquired at a time when she was so poor that she didnt have two nickles to rub together. She has a wonderful philosophy: "No one told me I couldn't do it, so I did." June grinds her own wheat and makes extremely delicious bread, as most of her friends can tell you, as she is very generous and willing to share it with others.
