The meeting was all conducted by the High genetic makeup of the animals. The latter is accomplished by selecting and breeding for animals that have more muscling and less fat, which takes time. Some animals are just naturally chubby. They will put on too much fat before they reach a choice grade. That is by the time these animals have been fed long enough to have the amount of fat marbling in the meat to receive the quality grade choice, they will have an excess amount of fat covering and internal fat in proportion to the red meat. They will rate low in the yield grades that range from one, top to five, bottom. Finch observed that we see very few yield grade number ones. We see quite a few twos and a lot of threes not so many over fat fours and still less sloppy fat fives. Chapman observed that under the new grading system it appears that producers can get by on less grain in the finishing diet than before and still produce the kind of cattle that will be readily acceptable in the market place. Under the new grading system cattle become fully finished and ready for market about two weeks quicker than they would under the old system according to Ray Extension Finch, U.S.U., Marketing Specialist. Keith Chapman, County Extension Agent explains that the new system emphasises cutability or carcasses with a higher yield of useful red meat and less fat. This part of the grading system is the yield grade. The more familiar quality grades, prime choice, good and standard, which refers to meat tenderness and flavor have been slightly n, edified. The total aim is to increase the muscling and reduce the amount of costly excess fat that must be trimmed off to make the meat cuts acceptable to the consumer. This is accomplished in two the ways by shortening feeding period slightly, less concentrate feeding rations and by changing the The high priest sang a song, singing were Grant Robinson, Bert Swallow, Wells Johnson, and Joseph Robinson.
