Frittata, prepared in the microwave oven, is the Italian version of our classic folded omelet. Cut into quarters and served with fresh fruit or sliced tomatoes, this omelet makes a light and nutritious lunch or dinner idea for two. Fresh Vegetable Bake is a main dish casserole of fresh corn and zucchini, cheese that doubles as a vegetable side dish. Zuccini Frittata tablespoons butter clove garlic, minced small zucchini, sliced tablespoons chopped green 2 1 1 2 onion eggs, beaten 4 tablespoons 2 cream b Vs whipping teaspoon salt teaspoon pepper In glass pie plate, melt butter 45 seconds on full power. Add garlic, sliced zucchini and chopped green onion. Cook, uncovered, 3 minutes on full power, stirring once. Transfer cooked vegetables to small bowl, leaving butter-garli- c mixture in pie plate. In medium bowl, combine eggs, cream, salt and pepper. Pour into pie plate. Cook, uncovered, 4 minutes on simmer defrost, stirring after 2 and 3 minutes. While frittata is still moist, add drained zucchini and green onion. Cook an additional 30 to 60 seconds on simmer or until just set. Brook Bradbury, Conni Burke, Kelly Duncan, Robin Higgins, Heather Martin, Robin Memmott and Teresa Springer have all participated in this summer in Clearfield Recreations new Puppeteering Class. Under the leadership of Dee Perry and Kathleen Abate the girls have learned how to make puppets, make them perform, design costumes and scenery, and even how to write their own puppet plays. As a finale for their eight week course, the puppeteers will present a free puppet show on Thursday, August 14 at 6: 30 p.m. in the auditorium of the North Branch Library. The show will include two skits which the students wrote for hand puppets and marionettes.
