Cool nights with touches of frost remind us that the time for harvesting vegetables for storage is near at hand. What provision have you made for storing fresh vegetables and fruits for winter? Good storage facilities will reduce loss through spoilage and cut down on expenses for food as well as provide better family meals during the winter. Two kinds of storage are necessary. A moist, cold, well ventilated place is needed for beets, carrots, parsnips, potatoes, turnips and rutabagas. By cold is meant a temperature between 32 and 40 degrees F. Moist means that the atmosphere is filed with water. A well ventilated place is one where the air is changed periodically to prevent moisture from condensing on ceiling and walls, to get rid of storage gasses, and to regulate the temperature.
