Each day of the fair will be dedicated to a particular group of p.m. and will continue through Sept. The first exposition associated with the State Fair was 'held in 185C, only nine years after the arrival of the pioneers entered in the Salt Lake Valley. This years event will be the state fair. Fair organizers said that the theme of the fair will be Really Great in 78 to reflect the culture of the day and the achievements Utahns have made in their endeavors. Opening day ceremonies will begin on Sept. 7 at 3:30 p.m. and the official opening of the fair will be at the carnival area at 5 p.m. Gov. Scott Matheson will be participating along 122 with fair director, Hugh C. Eringhurst, director of development services, Michael D. Gallivan and fair board members. The Kearns High School band and County Fair Queens from throughout the state will also participate. Many entries are expected this year with the possible total near 15,000. Approximately $63,000 will be awarded in premiums and more than ribbons. Hearty eating on a budget given in trophies and people in Utah. Sept. 8 will be Utah Municipal Officials Day, Sept. 9 will be Farm Bureau Day and Sept. 10 will be Family Day Schools Day will be Sept. 11, and 12 and Senior Citizens Day will be Sept. 13. Sept. 14 will be Variety Day and Kids Day will Sept. 15 and 16. The closing day of the fair will be called the Fair Finale. Ricky Tanner, Weber County Celebraty, will be performing at 6:30 p.m. on Sept. 7. He has performed with the Tabernacle Choir and in New Yorks Carnegie Hall. Other celebrities performing will be: Lynn Anderson, Red Steagall, Kenny Rogers, Johnny Rodriguez, Starland Vocal Band, Dottie West, Jim Stafford, Jimmy Rodgers, Nick Nixon and Eddie Rabbitt. Admission is $2 for adults; children 50 cents; five and under, free. Senior citizens 62 and over, $1 with discount coupons. Fair hours will be 11 a.m. to 11 p.m. daily. Last day closes at 9 p.m. 2, chicken Florence Mumford served a scrumptious casserole at a luncheon for PTA Council Presidents. All diets were suspended when the ladies tatsted the delicious dish, along with home baked Dilly bread, fresh vegetables, fruit salad and homemade ice cream. PTA can be hazardous to your waistline! Florences Chicken Lickin Casserole is great to fix for times when you want to get things done ahead, as it can be fixed the day before you want to serve it. It gives you a good feeling of being on top of the situation to know a rave quality entre is waiting in the fridge for you to pop it into the oven. Chicken is one of the few meats that are selling at a reasonable price lately. That has got to be a plus, too. CHICKEN LICKEN CASSEROLE Serves 8 to 10. Cover a chicken with water, simmer for 2 hours. Cool. Cut meat into cubes. Or, use a canned chicken. Melt 2 C. margarine (one square) in a large pan. Stir in 2 C. flour. Add 4 C chicken broth. Cook over high heat, stirring constantly, until thickened. Remove from heat. Beat 3 eggs. Pour 2 of hot thicken broth slowly into eggs, stirring constantly. Add to rest of broth. Season with salt and pepper. Melt 1 square margarine. Add and saute: 1 large onion, 2 C celery and 2 C. parsely, all chopped. Add 1 T sage, 2 t 1 salt and pepper. Toss with coarse bread crumbs made from 2 loaf of homemade style bread. This makes your dressing. Make a layer of 2 the dressing in a casserole dish. Pour suace and chicken over. Top with remaining dressing. Bake for 30 minutes at 350 degrees, or cover and refrigerate to bake later. If you are serving a smaller group, divide the casserold into 2 smaller baking dishes. Cook one and freeze the other for later. Insert meat thermometer at slight angle so bulb is centered in roast, but not resting on spit. Place on rotisserie and cook over low glowing coals 2 12 to 3 hours, or until meat thermometer registers 170F. Meanwhile, in small saucepan, combine remaining ingredients. Bring to a boil, stirring frequently. Remove from heat. Brush roast with sauce several times during last 12 hour of cooking. Serve remaining sauce with roast. Makes 10 to 14 servings. All fresh pork roasts should be cooked to an internal temperature of 170F. for the most juicy, tender and flavorful roasts. The Hansens are formerly of North Ogden, but now live in Alta Wyoming. Carol Manning Hutcheson is doing well with the sales of her Life History File Cards. Carol is a North Ogden native, who is now living in Bountiful. She is the daughter of Nephi and Ruth Manning. Because of her busy schedule as a wife and mother interfered with her desire to keep track of important occasions, in order to preserve the family members personal histories, she devised a file system. The file worked well for her, so she began to tell others about it. Soon she found she was being asued to speak at various functions to explain her file systems to others who were interested in writing their family histories, but found the task forboding. Carol spent many hourse typing card indexes to give to people before she realized that there was probably enough interest to provide a commericial market for her file system.
