Pumpkin Roll Beat 3 eggs on high speed for 5 minutes. Gradually beat 1 cup sugar into eggs. Add 2j cooked or canned pumpkin and 1 tsp. lemon juice. c. flour, Stir together tsp. baking powder, Vt tsp. nutmeg, 2 tsp. cinnamon, tsp. ground ginger, and Vi tsp. salt. Fold into pumpkin mixture. Line a 15xl0xl-inc- h pan with waxed paper. Grease and flour the waxed paper and spread the pumpkin mixture on the paper. Top mixture with 1 cup of finely chopped walnuts. Bake at 375 degrees for 15 minutes. Turn out on towel sprinkled with powdered sugar. Roll towel and cake together and refrigerate until cool. Unroll and spread with filling. Reroll and chill. To serve, slice and serve with whipped topping. c. cept fat. Beat until very smooth. Heat oil in heavy skillet to depth of 1 inch to 370 degrees F. (or until a cube of bread browns in 30 seconds).
