In fact Prime grade meat may be less healthful because it contains more fat — 1352 grams per 100 grams of meat for prime compared to 1059 grams for Choice and 916 grams for Select according to the USDA 1986 handbook That’s about 32 percent less fat for Select on the average Select also contains about 15 percent fewer calories (252 calories per 35 ounces for Prime 225 for Choice and 213 for
