Heres a hearty pieal that does the trick from all standpoints. Tempting, nutritious, and economical, it features fresh pork sausage with baked acorn squash and fried apple rings. Theres a precious store of vitamins and minerals in this meal. The sausage is an excellent source of thiamine, the vitamin so important to top health. Vitamin A value is abundant in the squash, and theres a lot of essential minerals in all of these foods. Much of the success of this meal will depend upon the right sausage. Buy it by brand name. A star brand will be guaranteed absolutely fresh, 100 pure pork with only carefully selected spices and seasonings added. For this meal, choose a handy, cellopham roll of sausage. Its a convenient type for slicing, too. Just cut the roll into the number of portions you want to serve, remove the cellophane from the slices, and theyre all ready to cook. d Heres all there is to preparing this meal. Cut two acorn squashes in half lengthwise, turn halves face down in pie tins, and bake 30 minutes in a 350 F. oven. Remove from oven, turn squash over, brush with sausage drippings. Sprinkle with sugar and finish baking for 5 minutes, right side up. While squash is baking, shape sausage into 4 large, oblong patties and brown slowly in frying pan for 20 minutes. Pour off fat as it accumulates. (Use this fat for seasoning the squash.) Place one patty in each squash. Serve hot. 4 servings.
