Likes Sanpete To the Editor: I've been on my mission in Louisiana . for about eight months now. I'm loving . every minute of it. I would like to tell you .one of my greatest loves and that is for the Sanpete Valley that good ole Manti lies in. For example, when saccharin was taken in doses equivalent to 1,250 cans 1 rof diet soda pop a day for a human being, was found to cause cancer in rats. Now I am not in favor of leaving dangerous subbstances on grocery shelves. But neither do I favor banning cars to stop traffic accidents. - I; - The problem with banning saccharin is or nitrites or cars, for that matter that it would remove a product from the marketplace without .leaving a viable substitute in its place. Diabetics, the and others who rely on saccharin have no other way to restrict their sugar intake. The storys the same with nitrites. Nothing preserves meat as safely or as well. I believe those benefits have to be considered along with a substances risks. I might be in favor of a saccharin or but only if a nitrite or even an auto ban safer, more viable replacements can be found. Judging from the mountains of mail that Congress received when the FDA I- weight-conscio- announced its saccharin and nitrite bans, I would say most of America agrees with me. The problem is, the law doesn't. In 1958, Congress adopted the Delaney Clause, which prohibits the use of any additive that is shown to cause cancer in man or animals. Period. Twenty-thre- e years later, scientists can break substances down into a trillion parts, and with that technological capacity, virtually everything has some trace of a potential carcinogen. When consumed in extremely large amounts, natural elements of potatoes, onions, spinach, nutmeg and black pepper have been tagged as possible carcinogens. So have essential nutrients such as vitamin D, calcium and selenium, as well as other fruits and vegetables, beer, and human siliva. Should the FDA ban these? Keeping the food supply safe is our highest priority. Yet, in light of these facts, some degree of risk is unavoidable. Zero risk is impossible to achieve. I think the FDA should focus its efforts on eliminating those risks that have a greater potential for harm than for good. 1 have introduced legislation that would add needed flexibility to a law that has not kept up with advancing technology. In those limited cases where the Delaney Gause would require an immediate ban on a food substance with no viable replacement, my bill would allow consideration of a substance with no viable repalcement, my bill would allow consideration of a substance's benefits to our food supply and health, as well as its risks.
