sharpened blade against the on pressing shields of ignorance As you may well remember our last article dealt with wine and the proper manners in tasting it Now we are entering the wonderous world of the aperitif You might ask "Gee what is an aperitif” and that would be a very good question I only wish I had a very good answer The dictionary says “An alcoholic drink taken before meals to stimulate the appetite” but it’s more much more than that If you were to drink just anything alcoholic that you might have around the house it would not act as an aperitif but instead if it didn’t kill you it would dull your taste buds and kill your appetite The amount of the aperitif should be very limited Aperitifs as with all things should be taken in moderation for anything taken in excess is harmful The whole point to an aperitif is a short refreshing drink before your meal to set up your taste buds so you can enjoy your meal more The best of the aperitifs is Dubonnet It is dark red in color and sweet in flavor Dubonnet Blonde is much lighter almost pale in color and " much drier 'in ta'gte” Byrrh is a dark aperitif wine that has the flavor of sweet oranges As with most all aperitifs it is best served cold and if possible over ice Raphael is an almost blood red wine that tastes of southern peaches It can be mixed with a wide variety of beverages alcoholic and non to make a delightful drink This is true for almost all of the aperitif family Lillet comes in two forms blond and red It is lighter than either Byrrh or Raphael and is very popular in the US especially on the east coast Lillet tastes very much like a small amount of vermouth mixed with fresh oranges Campari is a very tart very dry and very expensive aperitif that is best when mixed with a mixer of your own choosing Cynar is for the more refined and selective connoisseur of aperitifs For Cynar is a bittersweet tasting aperitif that has the flavor of artichokes Amer Picon is another that should be mixed with something before drinking It is black in appearance and has the flavor of oranges mixed with gentian which is a bitter tasting root This mix makes for a very unusual drink Suze is a bright yellow aperitif that is almost impossible to drink By itself straight but is delightful when mixed with lemons or oflimes it is whatever it has a most bitter taste but easily picks up the flavor mixed with Now as far as aperitifs go I have only touched upon a few There are the ever popular many more that there just wasn’t room for such as Ouzo of course and Ricard Pasitis Pernod Anis or While we haven’t covered all of them we have given you a wide chance come variety from which to choose If in youris travels you per it what know upon one you will at least If you would like to try an aperitif but can not find one to your liking at the liquor store try this : a small amount of vermouth with a twist of lemon or lime Leave a piece of the peel in the drink it will add the flavor You might also try
