In my early wedded days it was my opportunity (although at the time this was not my idea of an opportunity) to work on a turkey farm. Being unaccustomed to farm life in general and learning all about the ins and outs of turkeys (literally) left me knowing more than I think 1 wanted to know about turkeys. By the time Thanksgiving rolled around that year I knew I would definitely be serving a nice meatloaf for our traditional dinner. With the Thanksgiving holiday just around the corner many of you will break from the traditional turkey bird and enjoy a baked ham. Suggested below is a menu to accompany that ham. Holiday Baked Ham Yummy Potatoes Buttered Frozen Peas Cranberry Salad Rolls and Butter . Yummy Potatoes 6 medium potatoes, V cup butter preboiled pint sour cream can cream of chicken soup Vi cup chopped green onions cups shredded sharp cheddar cheese Vi cup crushed cornflakes 3 tablespoons butter Cook potatoes until tender; cool and shred or grate. Heat the V cup butter with the soup until melted and stir until blended. Blend sour cream, onion and grated cheese into soup mixture. Mix well. Add this mixture to the potatoes 1 1 lj 1 and place in a 9 X 13 inch baking pan or casserole dish. Combine crushed corn flakes with 3 tablespoons melted butter over and sprinkle casserole. Bake at 350 degrees for 45 minutes. Cranberry Salad Mix: 1 lb. ground fresh cranberries (can be done in blender) 1 Vt cups sugar Let set for 2 hours Mix: 1 pint whipping cream (whipped) 1 (8 oz.) pkg. miniature marshmallows ' Let set for 2 hours Combine cranberry mixture and whipped cream mixture and add one can (20 oz.) crushed pineapple well drained. Let set overnight. |
