To answer the first question first mineral oil is nontoxic, and supposedly could be used for cooking, but it has other disadvantages. It tends to absorb the vitamins A and D from the intestines, thus depriving the body of these essential nutrients. It has a disagreeable tendency to leak from the bowel and stain the clothing. And it contributes no useful nutrients, as the other fats do. Calorie Cutting The inquirer wants to cut down her calories, and perhaps she should; her doctor should advise her how to do it. As for substituting salad oils for butter to lower the calorie intake, here are some figures which should be sufficient commentary on that idea: Butter, which is 82 fat, plus salt and water, supplies roughly seven calories per gram, about 33 per teaspoon. Salad or cooking oils are 100 fat and supply roughly nine calories per gram, 42 per 18 8.) Instead of reducing her calo- ries, she has increased them by about 27 percent by substituting salad oil for butter.
