While sauce simmers, put peaches into boiling water for 1 minute. Then plunge peaches, at once, into cool water. Strip off skins. Cut into halves. Remove pits. Add brandy and 6 peach halves to hot honey sauce. Cook 10 minutes over low heat. Keep spooning honey-brand- y sauce over peaches. Put peaches into serving dish.
