Economic pressure is, of course, responsible for the vast majority of changes, yet certain agencies who have poneer-e- d projects resulting in more profitable operations should be credited with inaugurating policies which have since proven to be valuable. A great deal has been written about the trend from the aged steer, with the heavy beef carcass, to the present day younger animals, termed in the trade as baby beef. Due to the fact that the range finishing of yearlings is a rather difficult proposition, the western country was slower to turn to the maiketing of young cattle than in the Middle West, where dry feeds have been used for several generations. It was about five years ago that the interests associated with the Los Angeles Union Stock Yards started a progressive campaign to encourage the feeding and production of baby beef on the Pacific Coast. The organization advocated the selection of well bred calves, carefully selected from herds where good grade cows and pure bred, registered bulls had been used. Orchardists and small farmers were encouraged, and to som extent financed, at the outset, so that homegrown feeds could be utilized and home grown in order to provide fertilizers to enrich the soil. Good growthy young calves were taken directly from their mothers, and placed Animals on concentrated feeds. weighing from 300 to 400 pounds proved to be the best feeders and to make the most profitable gains. It devloped that the Pacific Cobs meat distributors found the 700 tc 850 pound finished animals best suited for their trade requirements, al though animals weighing up to 1,000 pounds or better, ordinarily received good attention from distributors. A carcass which does not carry too much waste and kidney fats proves to be the most popular, and under proper feeding methods, the beef is tender anc dtelicious, as the fat particles are well distributed through the lean meat. Like all pioneering efforts, at the outset the project was fraught with Some a great many complications. feeders attempted to put on the market anything from dairy breeds to very common beef breeds, which in the nature of things, would never produce baby beef. Meat distributors who were unwilling to pay the additional cost per pound of real baby beef, attempted to sell to their patrons common and ordinary meat from unfinished young stock, taking advantage of the advertising and publicity accorded the baby beef campaign. This proved1 to be one of the most difficult bstacls to the success of the cam MB - I paign, but ha been partly overcome through the trade marking and stamping of carcasses. There are now something like baby beeves being fed in the territory tributary to the Los Angeles market, an indication of the success of the campaign. Often, those who attempt to feed baby beeves do not properly finish the calves.
