Two of the 30 cases of botulism reported last year were found in tomatoes. This was shocking because we have always thought tomatoes to be safe due to their high acid content. Homemakers should select round, red tomatoes for canning since the new white, yellow and different shaped tomatoes are generally low acid. It is extremely important that follow canning procedures as outlined in a good canning booklet. Do not skimp on time and remember we have to add additional minutes to the processing time at our altitude. Because of the many new questions regarding tomatoes, home-canner- s Utah State University has received a grant to initiate a "Effect of project entitled, processing techniques on the safety and quality of home canned tomatoes and tomato products."
