Mandarin Orange segments, drained 3 eggs, separated Y cup soft fresh bread crumbs 3 Tbsps. fine dry bread crumbs 1 lb. size Melt the butter and stir in flour. Gradually stir in cream and seasonings. Stir over low heat until mixture thickens. Mix in carrots and orange segments. Remove mixture from heat and stir in beaten egg yolks and soft crumbs. Fold in egg whites beaten until they are stiff enough to hold a peak, but not dry. Have ready a ring mold buttered and coated with fine crumbs. Use a spatula to gently turn mixture into mold. Set mold in pan of hot water and bake in a moderate oven, 350, for about 50 minutes or until firm. Unmold on serving platter and fill center with creamed green peas. Makes 6 servings. PORK ROAST Drain the Mandarin Oranges into a small saucepan and return about Ya of the segments to the liquid. Reserve remaining segments for sauce. Use fork to break up segments in juice. Add soy sauce, honey, salt and ginger. Bring to a boil, reduce heat and cook 5 minutes. Cool. Pour mixture over meat and let stand in refrigerator for hours, turning meat several times. Drain meat and roast in a moderate oven, 350, for about 1 hour or until done. Baste often with marinade during roasting. Serve hot or cold with Orange-MustarSauce Makes 4-- servings. SAUCE: Combine reserved Orange segments with Va cup prepared mustard (hot or mild according to taste), and 2 tablespoons soy sauce. Serve hot or cold with sliced roast Makes about 1 cup.
