If so, youll be delighted with special recipes shared by Mrs. Paul (Connie Erickson) Jeppesen of 869 North Tremont street in Tremonton. Connie is a native of Salt Lake City where she graduated from West High school and LDS seminary. She also graduated from Utah State university in Logan, majoring in secondary education and specializing in English. She has served as a substitute teacher at both Bear River High school and Bear River Junior High school. She is now the cheerleader adviser at BRHS. Connie met her husband while attending USU. Paul is now head basketball coach and assistant football and basketball coach at BRHS. Have Three Children They have three children Jeffrey, 5; Jennifer, 3, and Jami, just one month old. Since their marriage they have lived in Logan, El Paso, Texas (when Paul served with the US Army), and in Preston before buying a home in Tremonton about a year ago. Connie shares her husbands enthusiasm for sports and together they attend ball games, play tennis and enjoy swimming, etc. They are close friends of Mr. and Mrs. Tom Steward of Brigham City. Incidentally, Tom Steward is the head basketball coach at Box Elder High school. Meanwhile prepare V2 lb. grated cheese and y2 c. chopped onions. Starting with corn tortillas, dip each one in hot fat just long enough to soften it. Drain on a paper towel and spread 2 T. meat sauce on each'tortilla. Sprinkle with cheese and chopped onion. Roll up and place in shallow baking dish. Sprinkle tops with remaining cheese and onions and pour c. meat sauce over all. Bake at 350 degrees for 15 min. Serve with additional sauce. Serves 8. y2 and Mrs. Quentin R. The bridegroom is employed at Thiokol corporation, and the couple is now residing in Brigham City.
