Many people have a lot of canned food spoil because they use the wrong kind of ja. Wash the jars thoroughly in hot soapy water. Rinse and keep neck down in hot water until ready for use. Before you start to can, read carefully and follow the directions for the kind of lids you are putting on your ars. Can Freshness In Your Fruits Choose fruits which are fresh, firm, but fully ripened. Can them as soon as possible after they have come from the orchard. Sort fruits for size and ripeness. They cook more evenly. Over-ripfruit or those' with bruised spots will spoil quickly. Wash fruit thoroughly. Water softener and a soft brush help do a good cleaning job on apricots, peaches, apples, pears and plums. Use Sugar Sparingly Good canned fruit tastes of the fruit, not of sugar. Use just enough sugar to bring out the natural flavor of the fruit. Make the sugar into a syrup. Do not use dry sugar. This or medium syrups are best.
