MISS TOOELE COUNTY PAGEANT: Directors voted Wednesday to turn the sponsorship of the beauty contest over to Sharon Foulger. This means the pageant will no longer be included in the Chambers program of work. GRANTSVILLE TRAGEDY: Our hearts go out to the families of those who were lost in what is being referred to as the Grantsville Tragedy. Things like this are hard to understand and the more one speculates the harder it is to conclude that anything makes sense. Thus, as Grantsville mourns so does Tooele Counfy and all others who have compassion for those who go before their time. The only solace is that a stronger power has things under control. Many consumers in Utah have developed some interesting recipes for canning soups, zucchini squash, jams, jellies, stews and mother mixed combination fomulations. Expressing ourselves using our own creativity is important and should be encouraged. However, one to important aspect of formulating new canning recipes is not clearly understood and has been completely disregarded by consumers. Safety is seldom if ever a serious consideration in fomulating canning recipes in the home. This fact creates a serious question as to the safety of consuming foods which were formulated in the home without adequate testing procedures. A tested recipe is one in which the length of time and the temperature of the food in the jar has been measured to insure that all microorganisms have been destroyed or prevented from producing any toxins which are harmful to man. Both the internal temperature of the food and the amount of time remains at a given temperature are necessary to insure a safe process. There are other things that must also be considered. Foods reach a given temperature in steam faster than in a boiling water bath. Heat penetration in thick soups is much slower than in pure water. The addition of low acid foods such as onion, squash, pepper and carrot in high acid foods such as tomatoes reduces the acidity of the resulting product. It takes longer to get the inside of a one inch beef cube to a given temperature than it does to get the inside of a 12 inch beef cube to the same temperature. All of these factors affect the safety of a process. How can a consumer insure that a product is safe without the equipment to measure temperature, acidity, heat penetration, rates etc. There is no way a consumer can insure the safety of an untested recipe formulated in the home. This is the reason the Extension Service recommends that consumers use only tested recipes from reliable sources. Laboratories with special equipment are used to determine the safe process for each specific recipe. If someone chnges a recipe there is no guarantee that it is safe even if you follow the processing methodand time recommended. If you happen to discover a new dish that especially pleases the palates in your home, dont preserve it by canning. CHICKEN VEGETABLE STIR-FRhead cauliflower 14 (can use carrots instead) 14 C fresh mushrooms, sliced (can use canned if ,S Is Y preferred) med. onion, sliced 2 stalks celery, diagonally sliced 1 C uncooked chicken, cubed 3 T butter or margarine 1 cube chicken boullion 12 C water 1 med. zucchini, sliced 1 can mixed Chinese vegetables 1 T cornstarch 1 tsp seasoned salt dash garlic (optional) (can use bean sprouts instead of the Chinese vegetables) Dissolve boullion in water. Chop cauliflower, slice mushrooms, onion, celery, zucchini. Saute chicken, onion and mushrooms in butter, or margarine until chicken is browned. Add celery, cauliflower and cook for 3 more min. stirring occasionally. Add boullion and steam for 3 min. Meanwhile, drain Chinese vegetables and reserve liquid. Add cornstarch to liquid. Add zucchini to vegetables and steam for minutes. Add liquid to vegetables and stir until thick, add seasonings. Serve over rice or plain. (SID)liased in Rome.
