An impossible task? Of course not, if you serve seafood! Healthy, delicious seafood cooks up in a matter of minutes, which is perfect for busy schedules. Cooking great fish is a snap when you remember this easy formula: one inch equals 10 minutes." That is, measure your fish fillet at the thickest part and allow 10 minutes of cooking time per inch of thickness. Here are some more rules to seafood cooking success: If your fish is frozen, simply double the cooking time. Add an extra five minutes when cooking in foil or in a sauce. Here are some quick and easy recipes to help you serve your family tasty, nutritious dinners in minutes. Potato Chip Encrusted Rockfish 4 skinless rockfish ounce flour 1 3 oz. (striped bass) fillets, 6 oz. each buttermilk cups salted plain potato chips, crushed 4 oz. clarified butter 2 Preheat oven to 350F. Dredge the rockfish (striped bass) fillets through flour, then buttermilk, and finally crushed potato chips. In a large skillet, heat the clarified butter and brown the fillets on both sides, careful not to bum the potato chips. When brown, place on a baking pan and bake at 350F for approximately 5 minutes or until fillets are done. Serves 4.
