Pomegranate and Papaya Salad with Ginger Dressing 1 medium pomegranate 2 tablespoons lemon juice 14 tablespoon white wine vinegar 1 clove garlic, chopped finely 1 teaspoon freshly grated ginger or 14 teaspoon powdered 1 teaspoon sugar 14 teaspoon salt 18 teaspoon black pepper 14 cup olive oil 2 heads Belgian endive 3 quarts torn lettuce leaves 1 medium h cubes papaya, peeled, seeded and cut into 2 tablespoons thinly sliced onion of green part green 12-inc- Separate seeds from skin and pith of the pomegranate; reserve. mix lemon juice and next 6 ingredients; whisk in large serving platter, arrange endive leaves like spokes with tips pointing out. Toss papaya with 1 tablespoon dressing; reserve. Toss lettuce with remaining dressing; mound over endive leaves. Top with reserved papaya; sprinkle with pomegranate seeds, then with green onion. Makes 6 servings. A medium pomegranate is about as big as a large orange and yields about 34 cup seeds. Choose pomegranates heavy for their size. To remove seeds, put on an apron to protect your clothing from possible juice stains. Cut the crown end off of the pomegranate, removing with it some of the white pith. Take care not to pierce the seeds within. Lightly score the skin in quarters, from the crown to the stem end. Firmly yet gently break the sections apart, following the score lines. Bend back the rind and gently scoop the seed clusters into a bowl; remove any pith. To make dressing, oil. Reserve. She was bom September 17, 1908, to Wilford and Lucy Maud Warr Belliston. After her graduation from Nephi High School she attended Utah State Agricultural College and then Brigham Young University where she earned a teaching certificate in 1928. Mrs. Beckstead later returned to BYU and received her B.S. degree in Elementary Education in 1958. She married Dr. Francis H. Beckstead June 25, 1930, in the Manti LDS Temple. Their children are Marilyn and Paul Andrews of Sunnyvale, California, George and Oneta Beckstead of Spokane, Washington, Robert and Doris Beckstead of Fairfax, . Virginia, Marriner and Jean Beckstead of Elk Ridge, and Betty and Arlo Williams of Brigham City. There are 17 grandchildren and 44 greatgrandchildren. Until the hospital was constructed in Nephi, Mrs. Beck- stead assisted her husband in his medical practice by accompanying him on house calls and helping in home deliveries and other medical procedures. She has been committed to serving the community through her membership and contribu- tion in many civic clubs and vice organizations. ser- Edith Beckstead In her 19 years as an educator, Mrs. Beckstead enriched the lives of hundreds of children in the Levan and Nephi elementary schools through her innovative and creative teaching techniques. Her church service has been long and constant. She has served in all of the auxiliaries of. the LDS Church in leadership and teaching positions. For the past several years she ha4 been the director of the two Stake Family History Library. Since her retirement from teaching she has enjoyed traveling, genealogical research, maintaining her home and yanl, and visiting with family members. To celebrate her 90th birthday, friends and family are invited to attend an open house at Mrs. Becksteads home at 47 East Center Street in Nephi on Friday, September 18 from 5 p.m. to 7 p.m. . 4 |
