Fresh Raspberry Cobbler by Jamie Sevy and Mallory Everitt, 1st place 3 cups fresh raspberries 2 packages Danish dessert pound cake mix Boil Danish dessert in Dutch oven according to directions on box, cool and add fresh (or frozen) raspberries. In a separate bowl, mix pound cake to directions on box except for eggs, save them for breakfast. If using a deep 12 oven, you can use 2 cake mixes if you prefer more cake. But in a regular 12, two cake mixes will rise and touch the lid. Pour cake mix over the top of raspberries, spread evenly and bake for 30-4- 5 minutes or until cake is done. Serve topped with whipped cream or a scoop of ice cream on the side. Tips If planning to serve hot, cut back a little on the water in the Danish dessert, this will make the fruit a little thicker. Also, be careful with the bottom heat. Remember you are baking, so have more heat on the top. 1 Hot Fudge Cake by Robyn and Cheryl Heirtzler, 2nd place 12 cup baking cocoa cup brown sugar 2 cups water 1 package mini marshmallows 1 chocolate fudge cake mix cup chopped pecans Whipped cream or vanilla ice cream Mix together cocoa, bi own sugar and water in h Dutch oven and sprinkle marshmallows evenly over. Make cake mix according to package instructions. Pour mix over marshmallows, spread to cover completely. Sprinkle pecans on top. Put on lid. Place about 7 coals on bottom and 15 coals on top of Dutch oven. Bake for 30 minutes or until done. Serve warm, topped with whipped cream or ice cream. To make it even richer, try chocolate chips sprinkled on top before cooking. 1 1 12-inc- Chocolate Spice Cake by Sharon Michael, 4th place flour 14 cups sugar 13 cup unsweetened cocoa 2 teaspoons baking soda 1 teaspoon cinnamon 12 teaspoon nutmeg 14 teaspoon allspice 18 teaspoon salt 1 12 cups applesauce 12 cup milk 12 cup buttei or maigarine, 1 teaspoon vanilla 1 cup chopped nuts (optional) 12 cup raisins Combine flour, sugar, cocoa, baking soda, cinnamon, nutmeg, allspice and salt in large mixer bowl. Stir in applesauce, milk, butter or margarine and vanilla, blend well. Add nuts and raisins. h Pour into greased and floured Bundt pan or pan. Bake at 350 for 55 to 60 minutes for Bundt pan or 40 to 45 minutes for oblong pan, or until cake tester comes out clean. Cool 15 minutes, remove from pan. Cool completely.
