Their owners know that breakfast sells anytime. It sells at home, too, especially in the evening, when we want something thats both quick and comforting after a day at work or school. Think of traditional morning foods scrambled eggs, pancakes, creamed eggs, French toast, savory omelets, quich? es, stratas, eggs Benedict and other poached egg dishes. Why reserve them just for At suppertime, simply break out the eggs and a few other items. For savory scrambled egg fajitas, steam or saut a little chopped green pepper and onion and, perhaps, strips of cooked chicken, diced cooked ham or another leftover meat. Pour on beaten eggs and scramble until no visible liquid egg remains. Spoon onto tortillas and top with salsa and a light sprinkling of shredded cheese, if you like. Accompanied by sliced fresh fruit, its a hearty dinner in minutes! How about French toast? Not only is it easy to prepare, but its best made with day-ol-d bread or even thawed slices from a frozen loaf. The classic recipe of bread slices soaked in an k mixture is a family favorite. For something more extraordinary, though, add a pinch of your favorite herb or spice or a dash of extract to the milk. You can also substitute fruit juice or cider for the milk an especially good option when youve run out of milk. For a really different treat, though, consider Plum Upside-Dow- n French Toast. This unique version is baked like an upside-dow- n cake over luscious fresh plums, rather than grease. Its a great choice for those who want to eat more healthfully and have a Tear of frying". When served, the cooked plums and their juices serve in place of syrup For extra convenience, soak the bread the night before you plan to serve it. s sun-up- t egg-mil- Plum Upside-Dow- French Toast n 6 eggs 14 cup skim or low-fmilk 12 teaspoon vanilla 12 teaspoon almond extract 6 slices French bread 2 cups chopped pitted ripe fresh plums 2 tablespoons water d brown sugar 13 cup 12 teaspoon grated lemon peel Mint leaves, optional w at I h) ' firmly-packe- i Ilf r 4 - y sliss5. In medium bowl, beat together eggs, milk and flavorings until well blended. Pour about half the mix- ture into 8x8x2-inc- h baking dish. Place bread slices in mixture. Pour remaining mixture over bread. Let stand until liquid is absorbed, turning occasionally, about 10 minutes, or cover and refrigerate several hours or overnight. Place plums and water in medium saucepan. Cover. Cook over medium heat until plums are tender Stir in sugar and lemon peel. Spread over bottom of 8x8x2-inc- h baking dish. Gently place soaked bread slices on plum mixture. Bake in preheated 375 F oven until lightly browned, about 20 to 30 minutes. Garnish with mint leaves, if desired. Ji '' I Times-New- s r f.
