Show R3fS zucchini pineapple safe? Maybe not! Is Window On Main Street !? V Sia I ' bv Mariann Gibson ( p-S- ' rR, I I t Like the pages of an Agatha Christie novel, or like the scenes from an Alfred Hitchcock movie, January 20, 1981 will probably go down in history as a day to be remembered for its drama, suspense, pomp, ceremony and emotional impact. Like thousands of Americans I found myself glued to the television screen, with the intent of witnessing the Presidental Inauguration of Ronald Reagan. Perhaps a fascination for history in the making, or a curiousity for political ritual or just a love for parades, I wasnt the least bit disappointed with the days events. However, in the midst of this gala atmosphere of Washington D.C., the nation was being swept up in the dramatic events unfolding in the Middle East. The painful on againoff again release of the American hostages in Iran was coming to a close. Emotions were high, but fear that another delay or another condition could suddenly dash all hopes to pieces, made for a very tense atmosphere. Since the former hostages and their families are total strangers, to most of us, it is difficult to explain why we feel so deeply involved and so emotionally at- tached. Over the past fourteen months weve watched this saga take place. Perhaps through our feelings of anger, helplessness, fear and compassion weve learned to feel a sort of kinship with these people, and their families. And Im not ashamed to admit that on two occassions I found it literally impossible to hold back the tears. The first was during the Inauguration Parade when they interrupted the coverage for a moment to show the arrival of the two U.S. airplanes landing in Algeria to wait for the arrival of the 52 Americans. The scene then went back to the parade just in time to watch the Mormon Tabernacle Choir approach the Presidential reviewing stand. As the choir raised their voices to sing, Battle Hymmn of the Republic the scene became very emotional.-Afte- r all, its rather impressive when the singing of a song can stir the President of the United States to tears. Then, in Algeria the long awaited scene unfolded, the 52 Americans arriving on safe ground. Well, it was a scene Ill never forget. January 20, 1981 is the day we welcomed a new President into office and the day we rejoiced the return of 52 friends'. meg -- Tax revision is $34 million says Sen. Peterson rip-of- f, by Sen. Cary G. Along with the proposed property lax in low-aci- d zucchini pineapple samples, Mendenhall found that 5 percent had unacceptable and dangerous acid levels. He says it is vitally im level. The great lesson to be learned from this canning season is that it is unwise, if not foolish, for consumers to formulate their own recipes for home-canne- Mendenhall says. Consumers have no equipment in the home to measure acidity or to determine effective processing times. Mendenhall says the real question that needs to be answered is, Is the pickled zucchini I canned safe? He says that if you followed one of the two tested recipes released by the USU Extension Service in August and used proper techniques, you are probably OK. If you used your own formulation or a friends, it is hard to say just how safe your product is. Mendenhall says that if your recipe came from a book, newspaper, or magazine, you should contact the author to ensure safety. He says there is danger in modifying published recipes and passing them on to others. Two examples of this which came up in the 1980 canning season were products referred to as zucchini pineapple and pickled zucchini. Mendenhall says the USU Food Science Laboratory has been deluged by samples from consumers questioning the safety of their product.
