This ' is the third Blaine Jones and probably the final week on this subject. Probably the most common vegetable that is stored in a cellar or pit for winter use is the potato. Potatoes that are to be put into winter storage should have some special handling. They should be dug carefully and removed from exposure to sun and wind. If late blight is present, the digging should be delayed until the potato vines are dead and dry. I am sure that this is part of the reason why potatoes are not dug until late October. I know last year I was doing mine on the first day of deer season. Only those tubers that are sound and free from cuts, bruises, and other injuries should be put into winter storage. Those that show these types of injuries can be sorted out and used up first. Generally it is the later crop of potatoes that are put into storage. Ideally, the potatoes should be cured by holding them in relatively moist air for one to two weeks at a temperature of 60 to 75 degrees. At colder temperatures, any wounds that might be on the potatoes do not heal. While this curing process . .. UAC meets in Nephi on Tuesday Legislation which will place the burden of paying highway use tax on the highway users instead of taking funds from the states general fund will be favored and worked for by the Utah Association of Counties (UAC), according to information presented at a meeting of the association held in Nephi on Tuesday morning. Such root crops as parsnips, sulsify, and horseradish can be left undug (in other words, stored in the garden). They can also be stored in the cellar like carrots and turnips.
