Several friends or relatives, got together and helped with the cutting, layering and salting the cabbage. They covered it with a wooden, cir cular board, which was to be held down by a large rock. (This was followed by coffee, sandwiches and cake, as a treat for help granted.) A weekly skimming of the brimy foam had to be done. When no more foam formed on top, the sauerkraut was ready to eat.
