Cherry Coconut Parfait 1 package coconut cream 1 package cherry-flavore- d pudding and pie filling gelatin 1 cup hot water mix 1 cup cold water cups milk Dissolve gelatin in hot water. Add cold water. Pour into shallow pan and chill until firm. Combine pudding mix and milk in a saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Pour into bowl. (To avoid surface film, place waxed paper directly on surface of hot pudding.) Chill. Cut firm gelatin in cubes and fill sherbet or parfait glasses 12 full. Cover with chilled pudding and garnish with an additional gelatin cube and mint leaf, if desired. Makes 8 servings. For creamier pudding, beat chilled pudding slowly with a rotary egg beater. The first day of school will start with an outstanding assembly and introductions of the advisors and faculty.
