All it takes is a little time and planning to enjoy the sweet flavor and gentle texture of fresh Bartlett pears year round. Before you preserve fresh Bart-letmake sure they are ripe. Interestingly, pears do not ripen on the tree; therefore they are picked green and firm, yet mature. The ripening process can quickly be accomplished at home by placing several Bartlett pears in a paper bag, loosely closed, and left at room temperature. The fruit is ripe when it is sunshine yellow and has a sweet aroma. With ripe fruit in hand, prepare Gingered Pear Preserves. Simply cook fresh pears, ginger and sugar until pears are transparent and ts syrup is thick. Process in a boiling water bath for 15 minutes and there you have it fresh pear preserves. It's a delightful accompaniment, served warm for poultry and pork or as a topping for muffins and toast. Spread some sunshine on your breakfast plans with the pear, cin- namon, allspice and clove inspired Spiced Bartlett Butter. For a butter prepared to perfection, drop a of preserve on a cold saucer and let it stand for a moment. If the butter is nicely mounded and there is no liquid surrounding it, the butter is ready. Combine in large saucepan with lemon juice and water; heat to boiling. Cover and cook 10 minutes until pears are soft. Uncover and cook over high heat 10 minutes longer, stirring and mashing pears as they cook. Puree half the mixture at a time in blender until smooth to measure 5 cups. Add sugar and spices; heat to boiling, stirring until sugar dissolves. Boil hard 1 minute. Remove from headspace. heat; stir in pectin. Pour into hot jars, leaving Adjust caps. Process 15 minutes in boiling water bath. Makes 9 cups. Preparation time: 30 minutes. Plan ahead: process. GINGER PEAR PRESERVES 6 fresh Bartlett pears 3 cups sugar 14 cup crystallized ginger, chopped 3 tablespoons lemon juice 7-- Photo courtesy of California Tree Fruit Agreement The freshly ripened sweet pear is delicious to eat immediately or preserve for a nutritious treat later in the year. Pare, quarter and core pears. Cut crosswise into thin slices to measure 5 cups. In saucepan, alternate layers of pear slices, sugar and ginger; drizzle with lemon juice. Cover and let stand 4 hours or overnight. Simmer uncovered about hours until pears are h transparent and syrup is thick. Turn into hot jars, leaving headspace. Adjust caps. Process 15 minutes in boiling water bath. Serve warm as accompaniment for poultry or pork or as a topping for muffins or toast. Makes 3 cups. Preparation time: 20 minutes.
