Keep your milk in a clean, dry room, free from all impurities or odors of any kind, at a temperature of about sixty if it degrees never above seventy-fivcan possibly be avoided. Never let your thirty-si- s milk get thick and sour before skimming it is the first process of decomposition in the milk, and the cream will partake of, and impart the same property to, the butler, if left on the milk too long. Churn your cream as soon as taken off. The practice of letting cream stand till it gels sour, so that it will churn easy, is very injurious to the quality of your butter. 1 have tested it in numerous instances for the last twenty years, and ant fully satisfied on this point. Don't churn too fast, or creato execs-piv- o action in the cream while churning. From thirty to sixty minutes is quick enough for butter to come. I have tried a score of patent churns, which would bring the butter iu a very few minutes; tut, after a thorough practical test, found the grain of the butter broken, and its keeping qualities materially injured. The dasher, barrel or rocker churn, either, is preferable to any of the new patents 1 have ever tried. I prefer the rocker. If you Lave proper care previous to, uud at the time of, churning, and your butter feels firm and works smooth, without sticking to the hands, take it directly from the churn, scperuting it ns free as possible from the milk. If your butter comes soft, and is sticky, drain off the milk, and turn in a pailful of clear, cold spring or well water, and churn for a few minutes. The best of Liverpool blown or rock ground salt should be used, at the rate of about an ounce of salt to a pound of butter. Wa ore informed that a very remarkable species of snake was on last Sunday evening captured by Trot. Lang, of this city, near Johnson's Wells. The professor, with two of Lis friends, liad gone out in the woods about two miles from the Wells, taking his violin .with him. He was at the time seated on a large rock playing a favorite air, and feeling something pass up Lis back, directed his attention to it, and discovered the monster creeping over his eliouldcr.
