A week before the Park City Wine and Food Classic that will be held from July 7 to July 10, the Park City Wine Club and the Fox School of Wine will unveil their collaborative programs during a wine club tasting at Old Town Cellars, 890 Main St., on Tuesday, June 28, according to Pamela Wood, certified sommelier and president and founder of the Park City Wine Club. “Old Town Cellars, OTC, is a private-label winery and have commissioned with all of the best areas in Oregon, Washington and Sonoma, California, and contracted wines,” Wood said during an interview with The Park Record. “They have a wine maker that makes the wine specifically for them. It’s their label. You can actually buy a bottle at OTC and not have to go to a liquor store. “We wanted to showcase the business and let the locals know about it,” she said. “We also wanted to encourage the locals to grab a bottle and go to a concert later.” The Tuesday event will include charcuterie platters and sweets from Ritual Chocolates for the different tastings, as well as a presentation by OTC’s Stephen MacKay. “Stephen, who co founded and co owns Old Town Cellars with David Hildreth, will talk 2 FOR 1 ENTRÉES breakfast The Park Record NOW OPEN For The S u m m e r Annual By SCOTT IWASAKI p.m. until 7 p.m. “The classes sample five wines chosen to reflect the topic of the weekend,” Wood explained. “All wines are available for under $30 and are available for purchase in Utah.” The cost for the Fox School of Wine classes is $37 per person per class. In addition to the separate events, the Park City Wine Club and Fox School of wine want to offer the community more in terms of wine accreditation, certification and food and wine pairings, Wood said. “Under Fox School of Wine, we started the Table for 12 tastings that are held at The Market,” she said. “They continue every third Thursday of the month, but we’ve also branched off from that with Kristen’s professors.” That means the Fox School of Wine can offer more events in the Greater Salt Lake area. “One of Kirsten’s professors is working on setting up winecredential courses, and they are thinking of stepping up to offer more advanced wine classes and food and wine pairings, not just in Park City, but all around the state,” she said. With the Fox School of Wine taking on more of the education aspect, the Park City Wine Club is focusing on the social aspect in the local community, with pairings at different restaurants, including Ruth’s Chris Steakhouse. “We want to showcase the combinations of their foods and wines that most people may not know about,” Wood said. “We also want to expand on the farm-to-table concept Second Old Town Cellars will host kickoff event on Tuesday to the group about the concept of Old Town Cellars and walk us through the wines, while telling us how they chose each area in the country for the wines,” Wood said. “Some of the labels, which are really fun, relate to Park City.
