Mix in a sauce pan 2 cups sugar, cup water, and 3 tsp vinegar. Cover the pan and bring the mixture to a boil. Boil 1 minute or until all the sugar crystals on the sides of the pan have been melted. Remove cover and continue cooking without stirring to 226 degrees on candy a soft ball when placed in cold water. Pour this syrup over fruit. (Do not scrape the pan). Let cool, then knead until well mixed. Form into two rolls about 2 inches in diameter. Wrap in wax paper and store in refrigerator for about 3 hours or until it slices well. If you wish to package for gift, wrap in wax paper, then foil. This makes about Vz lbs.
