Measure level Combine 1 c. fine graham-cracke- r crumbs, M c. sugar, VA tsp. cinnamon, V tsp. nutmeg, 4 tsp. salt. Work in Hi tbsp. butter; add 2 tbsp. egg white, slightly beaten; use to line 9" buttered pie plate. Bake 6 min. at 350 F. Cool. c. sugar, mixed with Next, scald l'4 C. milk. Stir into tsp. salt and 3 beaten egg yolks. Cook in double boiler over hot, not boiling, water, stirring until mixture coats spoon. Remove; stir in 1 tbsp. gelatin that has soaked 5 min. in VA c. water. When gelatin mixture is cool, fold in 3 egg whites, beaten stiff, and 1 tap. vanilla or rum extract. Chill until beginning to set; pour into crust; chill until firm. Before serving, top with Vi c. heavy cream, whipped, and 2 tbsp. grated semisweet chocolate.
