It forces you to eat balanced meals. That's the opinion of this week's good cook, Mrs. Bryan Larsen. 436 No. 1st East. Tremonton. Mrs. Larsen suffers from a mild case of sugar diabetes which was first detected about a year and a half ago during her pregnancy with her youngest child, Tricia, 11 months. The discovery created a few tense moments, husband and wife both concede. Mrs. Larsen admitted to being a bit "scared" when the disease was first diagnosed because she "didn't know much about it." The pregnancy and doctor's warnings that the condition could affect the unborn baby added to the problem. "The worst part was knowing somebody else was involved and you might be, responsible," Mrs. Larsen recalled. During the final six weeks of the pregnancy she underwent weekly tests to check on her own and the baby's health. , "Both mother and daughter made it through in flying colors. Mrs. Larsen's diabetes is relatively mild requiring no ' insulin but limiting her to a regular and strictly balanced diet. "I think if more people would stay on balanced diets their health would improve," she said. Having eight children around as enforcers helps Mom avoid temptation. "Mother, you shouldn't eat that," is the typical response when a piece of cake becomes an overwhelming desire. The Larsens have one of those traditional large Mormon families prompted by their own upbringing in large families. She comes from a family of 6 and Mr. Larsen comes from a family of 10. Their own family of eight includes Curtis, 15, 'Larry, 12, Vera Jene, 11, LaDawn, 10, Gerald, 8, Emily, 6, Michael, 4, and Tricia. Large families are "the best kind," according to Mrs. Larsen. "I don't think you really go without a lot by having a large family," there's a special closeness you can't get anywhere else...'' One thing diabetes has done is force Mrs. Larsen into the ranks of the diet drink drinkers. The kids "really think that's icky," she said. "I did too at first.. .now I can't stand regular soft drinks." Much of the time the entire family eats the same meals. But Mrs. Larsen does bottle her own fruit using a sugar substitute while doing it the traditional way for her family. The family also dries a lot of their own fruit which all can eat. Mr. and Mrs. Larsen are employed taking care of the Tremonton Stake Center in what Mr. Larsen terms a "partnership job." It's had to be lately because Mr. Larsen hasn't been able to help out as much. He sports a cast on his left foot: He blames the cast on Stake President Gerald Simmons who recently counseled fathers in the stake to "play with their boys." Larsen injured the foot playing football with his family in the back yard. "I don't know why he didn't say chess or checkers," he laughed. "We used to sell gloves, moccasins, ear rings, necky laces, purses and other from our store. This was before the young ones moved away and the old ones died," Ora said. Having witnessed many changes in the postal system as well as in the town of Portage, the Hoskins are hoping for the best. In the forties there were 500 people now there are but 189. They feel many people would like to return to Portage who grew up there, but the great distance to Hillfield, Thio-ko- l, and other major employers has been a factor. Still people living in Portage presently work in these locations. They claim land is hard to find but when the new water system goes in it whenever the bell rings," she added. Ora has been the President of the League of Postmasters for the state of Utah for 18 years, a postal counc-elo- r for 10 years and member of the cost assertainment program for 10 years. The Hoskins also have operated a small grocery store adjacent to the Post Office since 1945 and retired from that two years ago. "We really enjoyed the close personal contact with the people in Portage," 'Ora said. "We've watched the kids grow, marry and have kids of their own." The couple had many duties besides getting the mail to their friends and neighbors such as filling out forms for the earthquake evaluation and other official forms. The Hoskins even recall trading leather goods with post- master for the town of Portage since 1945, has retired.
