Being a number one milk lover, of course I panicked and started asking questions. It seems some big scare over cheese in California implicated raw milk and raw milk business dropped 50 percent! Unless business picks up it will no longer be financially possible for the Kesler family to provide this service to the residents of Beaver County. Not being an expert by any means, I still feel that I have enough information and education in nutrition to speak a few words in behalf of raw milk. I'm a great believer in foods as they were created. Anytime you start messing with mother nature, you cause problems. Most people will agree that when you heat a food, it destroys many of the nutrients. Well, the same thing goes for milk. Pasteurization is a heat process and therefore destroys nutrients in milk, making the calcium less useable by the body. Not to mention the formaldehyde that is added to pasteurized milk to improve shelf life. I'm not sure what that does to the system! Concerned about disease? Ask any dairyman the difference between a "Grade-A- " dairy and the requirek outlet. There is ments for a no comparison in the controls raw-mil- Box 351, Michael Puller to wed Karen Ashdown 84713 Beaver, required. Grade-- milk is heated to destroy any bacteria that may be present. Raw milk is not allowed to have bacteria. Cows are checked daily for burcellosis and the milk is checked constantly for bacteria. Raw milk cows are inspected monthly by the state for coliform, mastitis, and TB, tests which are not nearly as stringent for Grade-- herds. Concerned about cholesterol? The milk that is sold at the Riverside Dairy is carefully controlled to contain only 2.2 percent butterfat, well within the limits prescribed by most doctors as skim milk and the taste is far superior, as is any whole, natural food, once your taste buds are educated to "the real thing". (My kids think "store milk tastes funny). Another plus factor in raw milk is the price, only $1.50 a gallon, and the competition's a factor in keeping prices down. Milk prices in Beaver are as cheap, or cheaper than anywhere in Southern Utah. When the raw milk outlets in Hurricane or St. George shut down, shelf prices of milk tended to increase. All in all, it would be a shame to allow unfounded fears to keep you from drinking one of nature's most perfect foods, raw milk, and an even greater shame to have the dairy shut down and eliminate the free choice of those of us who prize raw milk as an important part of our diet. So drink raw milk, it's the real thing. A rcew Arriual Randy and Roxanne Bohn of Cedar City are the proud parents of a baby girl born July 1, 1985 in the Valley View Medical Center.
