Mix the seeds with cream cheese, minced onion, salt and pepper. Stuff the mixture back into zucchini halves, arrange in a buttered baking pan. Spoon sour cream evenly over top of each. Sprinkle with Paprika. Bake at 325 degrees for about 10 minutes. If desired fill the zucchini beforehand and spoon sour cream on just before baking. Spanish Rice & Zucchini 1 pound hamburger cups minute rice Vi pounds zucchini, sliced Vi cup onion, thinly sliced 1 can (16 oz.) stewed tomatoes 1 cup hot water 1 tsp. garlic salt Dash of salt & pepper 1 cup grated sharp cheddar cheese Brown hamburger in a large skillet, drain off all but 2 Tbls. fat. Add rice, zucchini and onion in skillet, and cook and stir until lightly browned. Stir in tomatoes, water and garlic salt and salt & pepper. Bring to a boil, cover and simmer 5 minutes. Stir in 'a cup of the cheese, heat just to melt cheese. Sprinkle with remaining cheese just before serving. TRIVIA Here we are again. Time for all to get out the zucchini recipes and think of new way to fix the beast. Not planting a garden this year, I have not been bothered with too much zucchini. My son and daughter-in-law have. She came up with a good recipe for fixing zucchini. I liked it anyhow. It is easy and good. Rice & Zucchini Cut zucchini in half lengthwise. Place in boiling hot salted water for 15 minutes or until cool enough to handle. Scrape out center and place in baking dish. Cook one package of Chicken Rice a Roni with rice. Top with grated cheese. Bake in oven at 350 degrees until zucchini, rice is heated and cheese is melted.
