NANCY HAYcN GRAHAM CRACKER SHELL: Mix "together l?i Vt 18 crackers crushed (about cup Beet Sugar, single), cups graham 4 tablespoons melted butter or margarine and 1 tablespoon orange pie pan. Bake in ;uic2. Press around sides and on bottom of s'.y.v oven (325T.) about 10 minutes. Cool. FILLING: eggs, separated cup Beet Sugar each salt, teaspoon ground cloves, nutmrt; teaspoon cinnamon teaspoon ginger Vi cup orange juice (fresh, frozen or canned) 2 cups pumpkin 1 cup heavy cream, whipped Pecan halves IN sauceoan blend together the egg yolks, V4 cup of the Beet Sugaf, salt and the spices. Add orange juice. Cook about 5 minutes or until thick, stirring constantly. Remove from heat, stir in pumpkin. Cool, BEAT egg whites until they form soft peaks; gradually add the Vt cup Beet Sugar; beat until stiff. Fold into cooled pumpkin mix. Lastly fold in whipped cream, reserving about Vz cup of the cream for garnish. TURN into pie shell. Chill in refrigerator. Garnish with sweetened whipped cream and pecan halves. Serves 6 to 8.
