Amano, Operator are abundant and reasonable in price during the early months of the year, and fresh eggs prnperly preserved may be kept for eight to twelve months in excellent condition and used with good results at a later date,'- - stated Prof. Freschnechr The poultryman advised presena-tioof eggs in sodium silicate, or water glass, as it is commonly called The present price of sodium silicate is about 35 cents per Quart, and at this price eggs may be preserved at a cost of approximately 2H cents per dozen, added Mr Frischnecht. who warned against using the solution a second time. He also mentioned that eggs laid in April. May and early June have been found to keep better than those laid later in the season, and there, fore recommended that only eggs laid at this season be preserved. Another point of emphasis lies in the condition of eggs preserved, he warned. Tf satisfactory results are to be obtained, eggs should be fresh and clean, and eggs that float when placed in the soloution are not fresh, and therefore cannot be preserved. When only slightly soiled, a cloth dampened with vinegar can be used to remove the stains. Under no cir. cumstances should badly soiled eggs be used for preserving; if put into the jar while dirty they will spoil, and washing removes a protective which prevents coating spoiling, stated Poultryman Frischnecht. Five steps were given by the Extension Specialist in the preservation of eggs this spring. Use one quart of sodium silicate to nine quarts of water that has been boiled and cooled. Place the mixture in a crock or jar. This will be sufficient to preserve 15 dozen eggs; and the quantity needed to preserve a larger number of eggs will be in proportion, The following steps were given by Mr Frischnecht: 1. Select a crock and clean it thoroughly, after which it should be scalded and allowed to dry. 2. Heat a quantity of water to the boiling point and allow it to cool. out nine 3. When cool, measure the in it crock, of water, place quarts and add one quart of sodium silicate, stirring the mixture thoroughly. 4. Place the eggs in the solution. Be very careful to allow at least two inches of the solution to cover the eggs. 5. Place the crock containing the preserved eggs in a cool, dry place, well covered to prevent evaporation. Waxed paper covered over and tied around the top of the crock will answer this purpose. Prohibition certainly isn't the answer. It's not that simple. We had nearly 14 years proof of that, didn't we? "The real answer is education and better control. In fact, the responsible members of the distilling industry are working constantly toward that end. They don't want anybody to abuse the use of their product any more than the three of us do." "If everybody would take that sensible attitude, Judge, and cooperate as more and more are now doing, we'd be a lot better off a lot quicker."
