How better could we describe economy meat buys cooked to eating perfection in your pressure cooker. We used to be a nation of steak and chop eaters, because we didn't know Any better. They had a good flavor and were easy and quick to cook. The less expensive thriftier cuts of meat were not bought for fear they'd prove tough and unappetizing and also because they required such long cooking time. This has all been revolutionized today. Now can cook a pot roast with potatoes, canota, and onions after church Sunday morning, or go home from work and have ham hocks with beans in no time at all. The former period of long cooking is t:ut to a mere fraction of the usual cooking time; nutrients and vitamins are conserved and delicious fla';.-ed, fork tender meat is always the result. No matter how tough a ~ ~e of meat is, it may be successfully pressured if it is first thorougnly "brown heated" to insure that delectable roasted taste. If not "brown heated,. the juices will be drawn from the meat while cooking. This process should take about 10-12 minutes per side an11 can be done right in the pressure saucepan itself, over a medium flame. Onion, garlic or celery may be added, but leave the salt until later as it too. tends to draw out juices. A Heel of the Round or Pike's Peak is a very economical cut of beef. Its average weight is about 4-6 pounds. From the larger part, have the butcher cut a 1-1% inch steak for swissing; next a pot roast; and have the end ground up for meat loaf, or cut up for beef stew. Following are recipes for cooking these different cuts in the pressure saucepan. _.P 1.
