Sodium is a mineral essential for good health, but too much sodium can increase blood pressure in some people. Consequently, many people are placed on restricted sodium diets by their doctor. It's important for people on a sodium restricted, diet to understand the saltsodium relationship. Table salt is 40 percent sodium and 60 percent chloride. Salt added to our diets through cooking or at the table is the greatest source of sodium in the American diet. One basic rule the American Heart Association suggests people follow to reduce their sodium intake is to take the salt shaker off the table. In addition, salt consumption can be reduced if, during food prepa of the ration at home, only one-haamount of salt called for in a rec ipe is used. But in selecting and preparing eat foods for a controlled-sodiuing style, it's critical to be aware of sodium naturally contained in foods. When purchasing prepared and prepackaged foods, read the labels. Watch for the words "soda, sodium" and the symbol "Na" on labels. These identify products that contain added sodium compounds. Food labels will usually describe the sodium content of the product tea in milligrams (nig). One-ha- lf spoon of table salt contains 1000 mg of sodium. The average American consumes roughly one to two teaspoonfuls of salt daily. The body actually requires only about one quarter teaspoon of salt, (or 20 gram of sodium) each day. Careful menu planning can help maintain proper sodium intake. For example, being aware of things like the fact that 4 ounces of baked ham contain 1027 mg sodium and the same amount of broiled halibut contains only 152 mg sodium, can make those choices easier. That does not always mean giving up the favorite baked ham. But to prepare scalloped potatoes, containing 430 mg sodium, to accompany the ham entree would be heavy sodium intake for one meal. Boiled potatoes with parsley, containing 4 mg sodium, would better fit Into a reduced-sodiuintake menu that includes ham. A reduced-sodiudiet will mean only occasionally eating salty foods, cutting down on the amount of salt you use in cooking and at the table, and reading package labels regularly to learn about the sodium content of prepared foods. Experimenting with herbs and spices as seasonings will help produce deliriously flavorful meals.
