A d supply of your own peaches, for one thing, will solve the dessert problem for many a meal and solve it with economy! d A sherbet glass of peach halves topped with whipped cream makes a delightful dessert and adds the touch of luxury. Also there are variations, such as Peach Upside Down Cake, Peach Pie, Peach Cobbler, Peach Melba, Peach Tarts. Dozens of dessert recipes call for canned peaches. Salads, too, are somehalves thing special when peach add to their color and flavor. When you're canning peaches you'll want to make some Peach Jam, Butter, Preserves or Conserve. These are most welcome at the breakfast table to spread on toast or to use on hot rolls and biscuits at company meals. The hot pack method is preferred for canning peaches, because the fruit is less likely to float in the jar. Sort sound, fresh, firm-rip- e peaches for size, color and ripeness. Wash, drain and peel. If evenly ripened, most varieties of free stone peaches can be peeled easily after blanching. Do this by placing enough peaches to home-canne- home-canne- Cumfany or two jars in a wire basket or square of cheese cloth, lower them into boiling water from 'a to one minute, then dip into cold water. Now drain the peaches, cut them in halves and remove the pit and skin. Drop the fruit into vinegar-sa- lt water (2 tablespoons vinegar and a like amount of salt to 4 quarts of water) for not more than 20 minutes. Rinse and drain, then cook in sirup made of one part sugar to one or two of water until hot through. Do not cook until soft. Or add dry sugar to suit taste and Cook until sutcar dissolves and peaches are hot. Pack the halves into hot jars pit side down in overlapping layers and add hot sirup to cover fruit. Put Dome Lid on jar and screw band tight. Process 20 minutes in boiling water bath. Peach Butter is a snap 'o make. You simply wash the peaches, and rub them with a cloth to remove fuzz. Discard the stones. Cook peaches until soft in just enough water to prevent sticking. Press through sieve or food mill. Add from M to cup sugar for each cup of pulp. Boil rapidly until thick. " The collection numbers some 82,000 pieces and are a valuable part of the Library's original research materials in the field of recent American history. The collection consists of correspondence conducted in the Executive Office during President administration. In addition to the Coolidge collection, the Library has the papers of most former Presidents of the United States and of more than 20 former Secretaries of State, including Charles Evans Hughes. It also has the papers of William Allen White, Coolidge's close friend and biographer, and of Harlan Fiske Stone, who was Attorney General in the Coolidge administration. The Coolidge papers contain many personal letters from Charles Evans Hughes, Frank B. Kellogg, Andrew W. Mellon and other members of his cabinet. The files on Lindbergh in the collection reflects the tremendous public excitement at the conclusion c of his solo, nonstop flight. A variety of honors for him were suggested, such as citations, awards, and medals; exemption from paying income tax for a number of years; and his name to appear on an airmail stamp.
