This 10 per cent includes all the volatile flavoring of the juice, and Howard P. Milleville and Rockerick K. Eskew, of the department of agriculture, devised a method of concentrating this fraction so that a gallon of essence contains the flavor from about 150 gallons of fresh juice. The remaining 90 per cent of the juice, they found, can then be concentrated into bland apple- sirup or commercial apple concentrate. - Thick Egg Whites In an egg of Grade A or AA the white is thick and holds the yolk in place. Synthetic Amino Acids Although it has been nearly 100 years since the first amino acid was synthesized by Strecker in 1850, only recently have methods become available for the production of several amino acids on a con siderable scale.
