This is an Italian dish, and calls for chicken gizzards, and is a recipe re-cipe often used by their mother. Mrs. Mary Schena. It may also be made with other meats, such as hamburger, but if your family likes chicken gizzards, this is the dish. Cut up Vi lb. gizzards and brown lightly in salad oil or butter with onion. Add tomaties or tomato paste and let simmer about an hour. Then add 1 cup of rice and chicken broth to cover. Simmer and as rice cooks continue adding broth until rice is well done. Sitr often. And now we come to the seasoning, which is largely larg-ely a matter of the individual cook's judgment, and goes in with the tomatoes.
