I am not quite that brain washed over food, or at least not yet ... funny things happen with age. I do have to say that with a large family, Christmas costing more and more every year, and the rising cost of gas for our large car I am finding ways to cut back on costs. Now, I am not ready to give up my name brand ketchup quite yet, but I am willing to try new things, For the holiday season every year, I make Chex mix. This is not your regular Chex mix with seasonings and such. This is a gooey and sugary treat that anyone watching the scales should probably stay away from. This year as I was making this scrumptious treat I was unable to find one of the ingredients in the name brand that I usually use. So, with my palms sweating, and my heart racing I walked to the generic side of the isle in hopes that maybe I could find a like item and make my recipe work. The cereal I needed wa there and so were the other cereals ce-reals that the recipe called for, I decided to go out on a limb and buy all three cereals in the generic brand. This would give me a savings sav-ings of almost eight dollars. How could I go wrong? Home I went with worry on my mind. I knew I could not wait until the next day to make my treat, because I would loose sleep over not knowing if the generic brand would work or not. So off to the kitchen I went. I mixed up the cereal examining ex-amining every piece for the differences I may find. None! I was so pleased. I boiled the candy coating poured it over the cereal wondering if the cereal ce-real would disintegrate or not. Nope! Nothing. Just a beautiful work of art. I laid it out on the parchment paper wondering if it would smell as yummy as the "real" thing. Oh, it smelled scrumptious. scrump-tious. The taste test would be next, would it be too dry or would the texture not be what I was hoping for? Nope! Perfection! Perfec-tion! Iloin'sChexrilix Mix in a large bowl 1 4 cups Corn Chex 1 4 cups Rice Chex 1 2 cups Golden Grahams 1 2 cups sliced almonds (optional) Mix in a saucepan 1 1 cup corn syrup 1 1 cup sugar 1 34 cube margarine or butter Bring to a boil and boil for 2 minutes. Add food coloring if desired. Pour over cereal mixture. Spread out on waxed or parchment paper to dry. Store tightly sealed. Cooks note: I have tried generic corn syrup.
