Serve hot When heating sugar and water, heat to boiling point, then simmer. Syrup can be made and kept in fridge. Just add juices and water when needed. Add Vi c. sugar, Vi c. butter, salt, beaten eggs and flour to form fairly stiff dough. Let rise 1 hour and 30 min. Mix down. Let rise 30 min. more. Form into balls the size of a walnut and dip in melted margarine. Roll in mixture of remaining sugar, walnuts, cinnamon. Pile loosely in ungreased angel food pan. Let rise for 30 minutes. Bake at 350 deg. for 30 minutes. Cool completely in pan before removing. Invert on serving tray. (Cherries may be added to bottom row) Small pieces may be "plucked" from the loaf. Chicken Dickin Selma Miller, American Fork 2 pkgs. dry onion soup IV2 cup raw rice 2 fryers, (cut up) 2 cans cream of chicken soup 2 soup cans of water Vi c. chopped pimento Vi can button mushrooms Vi tsp. Accent Vi tsp. Black pepper Spread dry onion soup on bottom of 4 quart casserole cover with raw rice. Arrange chicken pieces over mixture. Combine soup and water and pour over. Scatter mushrooms, pimento and seasonings over and bake at 350 deg. for 2 hours (covered). Remove cover and bake Vi hour more. (Great for a large party crowd) (L -, . - First Aid For The Christmas Crunch By Ratine Taylor With the Christmas crunch approaching us, our pocketbooks begin to feel the squeeze. However, we needn't consider this joyous time as a burden even with a seemingly endless gift list. Here are a few ways we can stretch our budgets or add to the family Christmas fund. 1. If possible, cut back a little on the grocery bill. Limit expensive meats or fancy foods. We often buy a 25 lb. sack of flour for about $4. There are usually several roll and bread recipes to use. Add cheese, herbs and spices or whole wheat for variety. For many inexpensive meals cor!iment them with bottled fruits and vegetables. Except for the Thanksgiving turkey and Christmas ham, other meats can be eliminated for these few months to add some extra spending money. You needn't go hungry and with all that flour there is plenty for holiday treats to give to the neighbors too! It's worth going without a little food to gain cash instead of pounds. 2. Look for a holiday job. Many stores offer at least a few weeks worth of work. Try the gift wrapping department or ask if extra help is needed for the Christmas rush of shoppers. Mink farms often employ people this time of year. Check with poultry companies to see if extra help is needed. University Mall often has holiday openings. 3. Let the children know early that Santa can't bring everything they ask for, although it would be fun and tempting to fill their every wish. It's easier to start with moderate piles of gifts when the little ones first experience the excitement ex-citement of Santa Claus. Even though the family budget may vary from year to year, it's often better to give "some" before they expect "much." If a stack of presents is heaped high one year because of a full pocketbook, the next Christmas may be quite different. Avoid the disappointments by helping children appreciate what they do get. 4. Leave credit cards home. Avoid debt. Sometimes careless use of credit cards causes us to live in financial bondage. The "after Christmas blues" hit the hardest on those who are still paying their holiday dues when the New Year begins. Santa sleeps better with a clear conscience. K" 5. Learn to manage money before it manages you. Do you live within your means? Do you try to outdo your neighbor's Christmas? I remember as a child one particular friend of mine seemed to get everything I got. My mother had talked with her's several weeks before Christmas. When the big day finally arrived, her presents duplicated mine even though she hadn't asked or wanted several of the gifts. Christmas is a time we can express some of our feelings through gift giving, but no material possession can compare to the unselfish un-selfish time and love we can share with those who mean so much. Sour Cream Rolls Lynda Beal 1 large carton sour cream 2 Tbsp. yeast in 1 cup warm water 1 cup sugar One-fourth cup shortening 1 tsp. soda 1 tsp. salt 2 eggs Approx. 7 and one-half cups flour Heat sour cream over low heat Fix the yeast in water. In mixing bowl add sugar, shortening, soda, salt, eggs and part of the flour. Yeast should be ready now, add it and remaining flour until dough is soft and not sticky so you can roll it out. Make desired shape of rolls and thickness. Place on greased cookie sheet. Let rise in warm place until doubled, then bake at 375 for about 12 minutes. (Note: These work well with either wheat or white flour.) Posole' By Loretta Dyke, PI. Grove Rinse one 8 oz. package of Posole (dry cooked corn) and discard black looking corn. Put corn in large pan and cover with three inches of water. Add pork (3 pork ribs) and simmer all day, adding water as needed. Corn will fan out when ready. When near done (6 hours) add 2 tsp. of chile powder, 1-2 tsp. onion salt, 1-2 tsp. garlic salt, and green chiles if desired. Cook an hour longer. .,. Three Cereal Cookies Byjanetle Kirkham Highland 1 c. brown sugar 1 c. white sugar 1 c. shortening 2 eggs 1 tsp. vanilla 2 c. flour 1 tsp. soda 1 tsp. salt One-half tsp. baking powder 2 c. corn flakes 1 c. rice krispies One-half c. oatmeal 1 c. coconut Cream together sugars and shortening. Add eggs and vanilla, beat well. Add all dry ingredients. Mix and roll into balls and place on cookie sheet. Cook for 10 minutes at 350. Let cool. Different kinds of cereals can be used. Makes 4-5 dozen. 'All Kinds of Meat' Italian Sauce Betty Girot, Lehi 2- 3 lbs. of any meat available (lamb, chicken, pork, sausage, hot dogs, deer, pheasant, etc.) 2 cans of tomato sauce (15 oz.) 1 quart tomato juice or whole tomatoes. 1 cup of water Vi cup of onions (diced) 3 Tsb. of Italian seasoning 3- 5 gloves of garlic 3-4 sprigs of parsley Salt and pepper to taste 3 Tbs. sugar Grated Italian cheeses (Romano, Parmesean) Brown meat, drain all fat and return meat to big pot Add all ingredients except cheeses, bring to rolling boil and then let simmer for 1-2 hours. Turn off heat and then add cheeses. This sauce can be used on all kinds 0' macaroni and pastas, ravioli, lazana, cannolini, etc. Beet Jelly Loretta Dike, PL Grove Wash and cook 6-7 whole beets. Cook until done, about 20 minutes. Cool, remove beets and save juice. Boil for one minute: 4 cups beet juice, one-half cup lemon juice, one package pectin and one package unsweetened Kool-aid. Kool-aid. Add six cups sugar. Boil four minutes or until spoon is coated. Skim and pour into clean bottles, seal with parafin wax.
