Emily Marlowe NORTH COUNTY STAFF This past weekend we were out of town on a camping trip. As I mentioned to a friend that we were leaving to go camping, camp-ing, she said, "What a great vacation." If I had a second longer to chat with her, I would have let her know that spending an extra ex-tra couple of hundred dollars at the store,; packing for days beforehand; eating, drinking and sleeping in dirt; loads and loads of laundry to do upon returning home; swallowing bugs whole; and simply smelling smell-ing like a can of bug spray for days on end is not really my idea of a vacation. My idea of camping is roughing it at a hotel without room service. Call me spoiled (I know I am), I have a trailer that I can sleep in, use the restroom in, and take a fast shower in, but it is still not a vacation. heraldextra.com onweb northcounty Iamg fh store. If you do it right it can taste like something some-thing right out of a fine restaurant. res-taurant. The coals and the fire make food taste different. Hot dogs all the sudden become the top of the food chain and tinfoil dinners take on a new meaning when you eat them out of the coals. But, this is all work. This past camping trip, I decided to make it easy on myself and marinade all of my meat before leaving home. I simply cut my chicken tenders and steak into chunks, left my veggies whole and placed them in homemade marinade in a large ziplock bag. I placed the meat and veggies on skewers soaked in water (this prevents them from burning,) and tossed the skewers on the barbecue grill and within 10 minutes we were fine dining in dirt. As I was placing the meat on the skewers my husband and brother-in-law walked into our trailer and said, "Wow it smells great!" I said do you like ginger, and their response was, "We don't know, is she cute?" So, if you want to make someone smile with food ... fresh ginger is the way to do it. You can find fresh ginger in the produce department. It looks like a brown root. It should smell fresh and spicy. Do not choose the one that looks like leather. This would be old and not very flavorful. Ginger is wonderful in any marinade. There is no need to peel it for marinade. You will not actually be eating it; you will slice it and toss it into the bag for flavor only. You will also do the same with the garlic. gar-lic. So do not worry about having hav-ing large chunks of either. Never marinade in a metal container. It will alter the taste of the marinade. Do not reuse the marinade, unless you bring it to a boil to kill the bacteria. The longer you let the marinade mari-nade soak the stronger the flavor and the more tender the meat becomes.
