L. H. Pollard, and H. B. Peterson who have made studies of canning npa nroduction over many years. Dr. Pollard is head of the Vegv etable Crops department and nr Peterson, associate profess or of soils, Utah State Agricult ure College. Often in the past, farmers have waited until their peas reached prime stage before beginning be-ginning to harvest, so thav by the end of the harvest a large part of the crop had passed the prime stage. Dr. Pollard rec-rnmmends rec-rnmmends beginning the harvest early so that old peas will not be sent to the cannery. By doing do-ing this both the canner and the producer will benefit. Greatest Returns in Prime These reccommendations are hnm out bv studies conducted by Professor Ernest M. Morrison of the Agricultural Economics Department, USAC. Theses studies stud-ies were conducted in 1946 and 1947 on 100 farms growing peas in Cache and Box Elder coun-tiess. coun-tiess. Mumiij could not be judged entirely bv size, iney round that all peas of sieve grades were much er in starch content in the late season tnan in the early pan and that large peas might m tain more sugar in the early season than small peas in the late season. These men found that while starch content of the pea was a good index of quality and flav- or, this test could not be made easily in the field. The tender-ometer tender-ometer proved to be the most practical method for use in th( field. This method of grading peas is now used throughou Utah. Canners have also revised their grade prices in the past three years so that the farmer who harvests his peas while they are young and tender, even though his yield may not be a high, receives more than the one who keeps his peas until they are large and have a hi starch content.
